Recipe: chicken tortilla pie

I am always looking for new recipes because no matter what if feels like we eat the same things over and over. Today I would like to pass along a great recipe from Katie who blogs at a Mrs & a Mama. The great thing about her Chicken Tortilla Pie Recipe is it can be made unique to fit your family, something that is seriously important around here because I believe I am married to the worlds most picky eater.

[what you need]
springform pan
tortillas
beans
rotisserie chicken
green onion
pico de gallo
diced green chilis
shredded cheese
chipotle tabasco
This dish can really be cooked on any pan but I like using the
springform pan because it can be a little messy to assemble and the edge
catches all of the food. To start, I do a few things to prep like
shred chicken, rinse and drain beans, chop green onions, open the can of
green chilis and spray my pan with avocado oil. I also mix some of the
chipotle tabasco in with the black beans. This does make it spicy so
if you are cooking for kids you can add it to the areas of the pie you
would like and mark it with toothpicks.
Next, you will start to layer. This is the order I do them in:
tortilla, beans, chicken, green onions, pico, green chilis, cheese,
repeat.
While you are layering you need to be sure to get the food all the way
to the edges or else each layer will sink in on the edges (as shown in
photo above, bottom left) and the food will fall out as you build the
layers up.
In this particular dish I did three tortilla layers and on the third I
only put beans, onions and cheese. You can certainly do more layers.
I cooked it in a 350 degree over for about 20 minutes. You want to make
sure the center is hot before serving. We eat this alone or with
avocado slices and sometimes rice as a side.

Hey Y'all!
I know its been a little quite over here. I've just been focused on the fact that I am days away from my due date, three days to be exact. In fact as I throw this post together I am having contractions. While baby P probably isn't coming for a few more days it is fun wondering if this could be it.So I know it is a few weeks late but I wanted to share our trip to tulip town with you before life gets completely crazy. I love the tulips and missed them greatly during our time in California. If you ever make it up to the PNW during this magical time of year I highly suggest you add it to your to-do list.
Enjoy your weekends, and hopefully next time you hear from me I am holding a newborn baby.

Howdy, I am Natalie.
I am 28 years old. I was born and raised in Texas. This is my story.
I married my best friend on September 7, 2013. Our love story started with a bet in January of 2010. A friendly bet of whether he could get my number turned into something only God could have imagined.
We found out we were expecting shortly after we were married. On June 13, 2014 the best blessing and gift we could have received came into this world.
Being a mom to Makayla is something I cannot put into words. She has turned my world upside down, for the better. She has made me a better person and because of her I have finally found myself & my purpose. Every time I look at her, I thank God for knowing exactly what I needed in life. Because of her, I know that trusting in God plans always pays off. That even though it may be a rocky ride, in the end his plan is glorious!
Oh, I cannot forget about our fur baby, Abigail. She is our 3 year old, miniature Yorkie.
My blogging journey started about 5 months ago after Makayla was born. I started blogging to share my stories about this new life journey. I have enjoyed every minute in my blogging journey. It has been my outlet for expressing my fears, joys, ideas, thoughts, and struggles of being a wife, first time mom, and follower in Christ. I blog mostly about motherhood, as this is the biggest change that has ever happened to me. I also blog about life, marriage, recipes, and DIY crafts. It is crazy to think that others really enjoy reading my words, thoughts, and stories. I never thought I had a voice before blogging, even when I would speak out.
I have struggled with my faith since I was a little girl. It was not until about 5 months after my daughter was born that I let go of all my worries and fears and finally started truly trusting in the Lord. Since then, I put my faith before anything else.
I love crafting! It is my escape from reality and how I let me own creativity shine. I am outgoing, quirky, opinionated, and I wear my heart on my sleeve.
I have loved getting to know so many wonderful women through my blogging journey. I hope you will follow along with us on this journey we call life.

Essential Oil Giveaway

The last couple weeks I have fallen head over heals for essential oils. I went from using them here and there to incorporating them into our daily lives. They have been a lifesaver at the end of this pregnancy, and for Lilly in more ways than one. I can honestly say that without Holly of Hollystic Oils that wouldn't have happened. Jena was nice enough to mail not only a shirt for me, but one for Lilly as well. Mommy and Me sets are so adorable, and it really was so sweet of her. The shirts are made on American Apparel shirts which we love. They are so soft, and quality is always amazing. The shop has tons of different shirts, some more directly focused on faith than others, but they all share a positive message.
