Crockpot Zuppa Tuscana Recipe
I have seen many Zuppa recipes online, but I love everything better out of a crockpot. First it is so much easier to cook in a crockpot, but second this soup tates a million times better when all those flavors marinate together all day. So here is my version of Zuppa Tuscana
What you need:
1lb of Mild Italian Sausage
3 Large Russet Potatoes (2 if you like your soup less chunky)
1/2 of a Large Onion
1/4 Cup of Bacon Bits
2 Garlic Cloves
2 Cups Kale
1 32oz box of Chicken Broth
4 Cups of water
1 Cup Heavy Whipping Cream
In a pan on the stove cook the Italian Sausage. Add this to your crockpot, grease and all.
Wash your Potatoes, cut in half, then in 1/4 inch slices. Add to your crockpot.
Dice the onion and garlic. Add to your crockpot.
Add bacon bits, chicken broth, and water to crockpot.
Cook on low all day.
Before serving wash your kale, and rip the sides off (the ruffled part as I like to call it) and tear it into little pieces. When you have the 2 Cups add this to your crockpot along with the whipping cream. When it is heated thru it is ready to serve.
I hope you enjoy! It is one of our favorites.
Lillys Half Birthday
2/03/2014
How did we get here? How is my baby girl a half a year old?
Surely I am not the only one that fights tears back over the first half birthday.
I just couldn't help myself, we had to have a celebration for her first half birthday.
Nana even hopped on a plain and came to California to help celebrate this day, to help celebrate the beautiful girl that has stole our hearts.
To celebrate we headed a few hours away and enjoyed a meal at the Rainforest Cafe, made a special stuffed bear at Build A Bear, and did some shopping. This may sound a little crazy for a 6 month old but if you know Lilly you know she is a very curious and alert baby. She loves stimulation, the noises, and the movements of the Rainforest Cafe were something she loved. She could not take her eyes off the water fall as we ate, and we spent a lot of time watching the fishes (I see a fish bowl in our future).
This month has been so much fun with Lilly, her little personality has really started to shine thru.
She loves to growl, roll around the living room, and play with her toys. She loves to jump in her jumper, and man does she have some strong legs! We are working really hard on sitting up, she can for a few seconds until she gets excited and looses her balance. We have a future dancer on our hands, when music comes on she ALWAYS starts kicking her legs.
We are still in 0-3 month clothing, but can wear some 3-6 if it runs small.
We have started solids, and pears and bananas are her favorite so far.
We are currently working on 4 teeth coming in!
